So, basically I started my journey on March 2013 but I used to skip meals and binge-eat sometimes but walk a lot so I lost some weight. I became about 119 lbs but then I stopped doing everything as school resumed but didn’t stop binging. This made me gain again and I became 130. I was so unhappy and decided that enough was enough. I started walking 4-5 miles every day, working out till I sweated and eating more fruits and gave up meat. I lost so much weight but then had a surgery and had to stop working out and walking. You can see the surgery marks on my after pictures. I don’t know why but I started eating like crap again and gained. But I got the “after” results when I recovered and pushed myself to work out again and ate so much healthier. My goal weight was 105 but screw that. Healthy > low weight. :)
To everyone out there struggling, I know what it feels like but you should never give up. I have had so many up and downs, beginning since i was 12, but I know that when I finally reach the end of the road, the only thing that will matter is that I didn’t quit. It is the same for you. Just don’t quit. xxx
Decadent Chocolate Truffles
3/4 Cup Raw Cacao powder
1/4 Cup Cacao Butter, melted
1/3 Cup Coconut Oil
1 Tbsp. Coconut Butter
4 Tbsp. Liquid sweetener (I used honey, but feel free to use whatever you prefer)
1/8 tsp. Sea salt
1/2 tsp Vanilla, or flavouring of choice
Extra cacao for dusting
Melt the cacao butter, coconut butter, coconut oil, sweetener, and salt over a double boiler (or a metal bowl on top of a pot of boiling water). Once everything is melted, stir in cacao powder and flavouring. Stir vigorously, as the liquid sweetener is heavier than the other ingredients and will tend to not mix in as easily. Pour chocolate into a standard bread pan that has been lined with parchment paper. Place the pan in the refrigerator to set. Once set, the chocolate can be sliced into cubes and dusted with cacao. Store in the refrigerator for several week, or the freezer for several months.
